Chicken Enchilada Suizas Casserole

This is another chicken recipe that we have done recently! This is a Rachel Ray recipe and boy is it delicious! While eating, Chris repeatedly said he could eat himself sick on it, but he didn't! (Thank goodness!)

Here's how we did it...and by we I mean Christopher....he was such a good cook and I was in the process of working on an arts and crafts project for the party for Holly and Marty! More to come on that later! So anyway...back to Chris cooking..

First off you want to broil the poblano peppers. They didnt have poblano peppers at the grocery store so I just bought these peppers. I dont remember what they are....Ooops! But anyway they cook in the oven (broil) for about 10 minutes.

 Next blend tomatillos(12 medium-large) ( they didnt have these either so I just used a can of diced tomatoes), and cilantro (2 handfuls). Peel and seed the poblano peppers and coarsely chop them before adding them to the blender as well. 

 We boiled our chicken (we used 2 chicken breast) and then shredded it.  It just says cook chicken. So we chose to boil it. 
 Heat 2 tbsp of EVOO (extra virgin olive oil) in skillet. Add chopped onions (1 1/2 large onions), jalapeno (1), and garlic cloves (4). Saute in skillet until the onions softened. 
 Pour blended tomatoes, cilantro, and pepper in with the onion, garlic, and jalapeno. Stir in cumin (1tsp), honey (2 tsp), and chicken stock (1 qt)

Pour a thin layer of sauce to coat the bottom of the casserole dish. Then we dipped flour tortillas into the sauce to soften them up some. 

Layer 1: Tortilla


Layer 2: Shredded Chicken




Layer 3: splash some more sauce over the chicken.


Layer 4: Sour Cream (1 cup)




Layer 5: Cheese (1 1/2 c shredded Swiss Cheese, 1 1/2 c Monterey Jack)



Then cheese (1 1/2 c shredded Swiss Cheese, 1 1/2 c Monterey Jack)


After last layer top with remaining cheese. 


Place in 375 degree oven. Cook for 40-50 minutes.

 Take out of oven and enjoy how delicious it looks!


So So So Yummy! We will be using the recipe again and again!! Especially if Christopher has anything to say about it! I think I have found my hubby's new favorite!

Chicken Tikka Masala

So Chris and I have been ALOT of chicken lately. Many reasons for this, put because I knew we would be eating all chicken dishes for at least 2 weeks I tried to get creative with recipes. One of the first new recipes I used was for Chicken Tikka Masala. Now we like Indian food, but its difficult to make it and get it to taste  as yummy as it should. Our good friend Calvin has mastered it quite nicely and we always enjoy when he wants to cook Indian for us! But here is what we tried. We enjoyed it quite thoroughly. 


Many of the ingredients you just add to your tasting. First you cook 3-4 chicken breast. Coat the chicken breasts with salt, ground corriander, and cumin. Then cover with 1/2 cup plain yogurt.

 
Then you are going to Set them on a foil covered cookie sheet and broil for 5-7 minutes on each side. They should get a little blackened but not completely charred.


Next cut up a large onion, a chili pepper, 4-6 cloves of garlic, and a piece of ginger.

In a large skillet melt 2Tbsp of butter. Saute the onions, once clear, then add in the garlic, chili, and ginger. Then add in a pinch of salt and 3-4 Tbsp of Garam Masala. Stir.

Add the Rest.
Have a moment of break out singing with the hubby!


Then add in 28 ounces of Diced Tomatoes. 

Add in 1Tbsp of Sugar. Let this cook and glaze, etc for about 5 minutes. Then put in a blender and blend. Then put back into skillet. You don't have to blend it, but we like it not quite as chunky. Therefore we blend. 

Next add in about 1 1/2 cups of heavy whipping cream!
Stir to mix in heavy whipping cream. While that is simmering away...go ahead and dice up your chicken breast. Add diced up chicken breast to the saute mixture. Stir. 


Looking Tasty!!! If you want to you can add in a handful or so of diced cilantro. We love cilantro so of course we add it :)
I almost forgot about the rice! You want to cook rice while this process is going on. We use our rice cooker. It makes it super easy. Just add the rice, water, and about 1tbsp of Ground Turmeric to 2 cups of water. You can also add butter. 
You can add in frozen peas after the rice is cooked. The heat from the rice will heat the peas. I HATE peas so I skipped that step!
Once your rice is cooked serve up some rice with the Tikka Masala on top!
